Happy Saint Patrick’s Day! Hope it’s a lucky one!

The truth is, I really have no idea what St. Patty’s day is all about. I did a little research today though!

Saint Patrick traveled all over Ireland, converting people to Christianity. He built churches, schools, monasteries and spent his whole life ministering unto the Irish. On March 17th 461 AD,  Saint Patrick died. Saint Patrick’s day is a day for the Irish to celebrate his life and work.

Every St. Patrick’s Day I try to eat as much green foods as I can! This year, I did it all without food coloring, just all natural spinach 🙂

I think we all saw this coming.

Green waffles.

I was being stupid though, and decided to make 2 waffles out of the batch that really is just for 1 waffle. So the waffles were flimsy and didn’t cook too awesomely, but they tasted amazing.

I blended 1/2 a banana with some spinach and 1/3 cup milk and poured it into my dry ingredients for these waffles. It tasted like banana bread! So yummy. Especially with some homemade chocolate almond butter.

For a snack/late lunch I had a childhood favorite.

Egg in a basket and a kiwi. Aren’t kiwis the prettiest little fruits! They’re my faaaavvv.

I had no intentions of baking anything today, but somehow I read somewhere about an Irish Soda Bread. And I had to make it.

It’s not green, but it’s very Irish.

Run to your kitchen and make this NOW.

It is the most delicious bread I’ve ever tasted.

There are a few recipes around. I made Lick My Spoon’s recipe. I didn’t add raisins or seeds. I used 3 cups whole wheat pastry flour and 2 cups white whole wheat flour.

The traditional way to bake Irish Soda Bread is in a round cast iron skillet  and marking an X in the middle. My dough was very very wet and would not shape into a mound, so I just baked it in a regular loaf pan and then there was enough dough for a mini loaf.

The bread is so chewy and thick and amazing and subtly sweet.

I’m wondering how this sugar-free version tastes, compared to the recipe I made.

Along with this amazing bread, I made a spin-off of Erika’s Chicken And Chickpea Chili.

So delicious.

About 3-4 years ago, I remember me and my mom sharing a McDonald’s Shamrock Shake.

Mint chocolate goodness. I remember it being very good. But check out the ingredients:

high fructose corn syrup, corn syrup, water, sugar, natural flavor (plant source), xanthan gum, citric acid, sodium benzoate, yellow 5, blue 1

Um, do you want some high fructose corn syrup with your sugar? How about some yellow 5 with your blue 1?

Yeah, didn’t think so.

Lucky for you, there are other options. The lovely Katie made a delicious Raw Mint Chocolate Chip Shake and Angela made a Peppermint Patty Green Monster.

I made a spin-off of both of their recipes, but my photo came out really horrible! But I can assure you it looked a lot like this.

    WOAHHH!! I’ve never heard of mickey d’s shamrock shake! It’s really pretty, I can’t tell a lie! But definitely full of nasty ingredients….did you know a Frosty at Wendys has 26 ingredients!?! Your waffles look utterly disquisting but I really want to make them!!! Hahaha No joke, I’ll be making them (in pancake form because my waffle maker is broken!) this weekend…my mom will be like umm, Olivia?! haha wewh! I’m babblin’ now! I’ve missed connecting with you girlie!! We need to start up our emails again:)

    I’m only 12.5% Irish but I still like celebrating St. Patty’s day. Definitely did today with tons of green food and we just finished off a typical Irish meal. 🙂

    its so crazy that you made spinach waffles because i was thinking of doing that for my post today but it turned out that i hadn’t any spinach left because i used it up yesterday!! its really the only veggie that is versatile enough to work in waffles huh! YUM ❤

    and i'd much prefer your creation over a McDonald's milkshake!

    Green waffles?! So creative & great! Everyone assumes I’m really Irish cause of my redhair, but I only have a little Irish in me. I still wore green & ate lots of greens today.

    I am lovingg all this green food! I tried to wear green but everyone told me it was blue. Close enough. Haha and I love cooking an egg inside a piece of toast- so yummy!

    K am I the only one who immediately thought of the old Disney Channel movie when seeing the title of this post? haha that show was the best!
    What a fun idea to eat lots of green food for St. Patties day. I’m trying to think if I even ate anything green today.. wow how unfestive of me. I’ll have to remember to do that next year.
    How cool you’re related to Princess Diana! Does that mean you can hook me up with an invite to the wedding next month? 😉 I wish!
    I actually completely forgot to wear green today but luckily my fingernails were painted seafoam green. 🙂

    That is so cool about your ancestory! I’m a bit Irish; my great grandmothers family is from Belfast; last name Orr.

    I wore a green shirt today but didn’t really eat any green food. But I’m dying to make a homemade shamrock shake!! I used to love getting those in college (before I knew what was REALLY in them 😛 )

    I made Irish soda bread today and my dough was too soggy too! I did the whole X thing but it ended up spreading out way too much (as opposed to rising upward) so the X kind of disappeared haha.
    I’m so jealous you made eggs in a basket! That’s one thing I’ve always wanted to make but don’t quite know how.

    That is a scary ingredient list! Yikes! I was tempted to try the McDonald’s pumpkin pie shake in the fall and am very glad I didn’t 🙂

    I’m not Irish! 100% Italian. I never really celebrated St. Patrick’s Day so no green food for me! Although I had some lettuce and spinach! Does that count? lol

    I’ve never had mcdonalds shamrock shake and will definitely not ever have it after you just told me what’s in it!

    I did that last year… green waffles for breakfast, kale smoothie for lunch, cabbage for dinner… But this year, I completely forgot it was St. Patty’s Day 😦
    I don’t think I’m like at all Irish, but I’m like 8 or so percent Swedish 🙂

    I want to try the green waffles! They actually look really good to me. I totally planned on baking irish soda bread yesterday, but I had so much homework that I couldn’t even make a real dinner 😦 definitely having a belated st. patricks day celebration!

    Great idea on the waffles! I wish I had thought to do that! My only green food of the day was the kiwi juice I made to mix with my booze haha. 😛

    I am Irish! My great grandpa grew up in Ireland and moved to the U.S. when he was 17. He met my great grandma, who was also an Irish immigrant.

    I tried to make Irish soda bread too, but it was a total fail. haha. I can’t remember if I had any green foods on St. Patrick’s Day, but we did have corned beef and potatoes for dinner – typical Irish food.

    Those green waffles are so cute! Such a good idea!

    I’m glad you shared what St. Patty’s Day is about! I actually just mentioned on my post that I had no idea what it was about! Haha. Now I’m enlightened. 😉

    On St. Patty’s Day I ate.. a salad? That’s green! But that was all I ate that was that color. Even though St. Patty’s is now done I am definitely going to be making one of those smoothies!

    Love your blog and I am an avid reader! I never knew what st. Patrick’s day was about wither– thanks for the info! I wore some leaves in my hair as green, and put a sprig of parsley in my hot cereal as green food. Does that count?
