Peanut Butter Apricot Sandwich

I got the baking bug on Sunday and made Kelsey’s Blueberry Banana Oat Muffins.

They’ve been on my To Make tab for a while.

Naturally, I fiddled with the recipe a bit.

I didn’t have applesauce, so I used pumpkin which gave them an orangey color, as you can see.

And I nixed the sugar and instead added 1 more banana for sweetness. Oh and I used frozen blueberries, since that’s all we ever buy.

The muffins are delicious! And (BONUS) sugar-free! My mom has been enjoying them with coconut butter!

I had one for breakfast crumbled over some overnight oats!

With cashew butter on top!

Seriously, it was the best day of my life when Artisana sent me samples of their fabulous nut butters! I was not expecting the package and was (literally) trembling with excitement and joy when I opened the box and saw the nut buttery goodness!

My family thought I won the lottery or something with all the happiness that ensued.

For lunch I had a creation from the lovely, Tina.

Peanut Butter, Apricot and Walnut Sandwich.

It was ah-mazing!! I used 2 slices of homemade bread that I made fresh yesterday.

I “baked” the sandwich at 350°F for – I don’t know – a few minutes, to get it warm and toasty and so the peanut butter could get all melty.

This is a new favorite of mine, fo sho!! Apricots and peanut butter are a match made in heaven!

Tomorrow is the first day of February (Crazy!! Seriously, what happened to January?) and I’m going sugar-free for the first seven days of the month!

Here’s what’s going down:

I won’t be eating maple syrup, honey, agave nectar, evaporated cane juice, brown rice syrup, corn syrup (I don’t eat it anyway, just thought I would mention since it’s so common) or any other sweeteners.

will be eating fruit. Bananas, dates, apples, oranges, grapefruit, and any other fruit/vegetable that already has sugar in it.

Why am I doing it?

The truth is, I loooove sugar. Basically, I’m trying to just reduce the amount I’m eating and keep a careful watch on how much I eat. Eating sugar-free for one week last month really helped me understand that I don’t need sugar. Sure, I’m only going 7 days, but it’s a step!

        When I’m at home I legitimatley bake almost every day. This is in order ot make up for the many months I spend sans baking while at school…

        My housemates next year will be SO spoiled 😉

    I totally feel ya on the baking bug!! I need a seriously sugar detox! I had a big mess of ice cream last night and my body is totally hating me for it today!

    I seriously cant believe its February tomorrow either! Time is flying!!!! I swear it was just christmas yesterday! lol

    I love my Artisana goodies! This reminds me that I still have like 5 packets to try!

    I’m gonna try to go SF for two days this week! Tomorrow’s gonna be the first one – I even made my own SF bread and picked up some no sugar yogurt! YAY!

    I’m with Kate! I want to…but I don’t think I could!! Or If I did the moment sugar was back I’d probably down a hold gallon of ice cream with maple syrup, box of ego waffles, and sprinkles smushed in. haha.

    I love putting apricots in my sandwich! My favorite is pb, cacao nibs, and apricots 🙂

    I LOVE apricots and peanut butter – why have I not had this combination in a sandwich?! It’s probably even better than apricot jam 😉 No added sugar, either!

    Wow, I’m definitely very envious of all those nut butter samples you received 🙂 And that sandwich looks so good! I wouldn’t have thought of apricots and peanut butter but it sounds delicious. Good luck with sugar free week, I look forward to reading about it. I was contemplating doing it too but am going to be away for a bit this weekend and don’t want to have sugar restrictions. I love the idea though!

    I love the idea of going sugar free for a month. I really want to try that. That sandwhich sounds amazing! I can only imagine that the creamyness of the pb and the crunchness of the nuts complement eachother perfectly and I love apricots!

      Yes, it is pretty fantastic! My favorite way to eat the coconut butter so far is with strawberry jelly on bread, like a cheesecake sandwich!

    I love almonds with apricots. I once made a really delicious cookie recipe witha lmond butter, almond extract, and apricot jam. it was delightful.

    All of your eats look similarly delicious! 🙂 good luck with sugar free week! you are a brave girl 😉 haha

    Girl, I don’t think this post could any more delicious if you tried! I want your oats, your sandwich, and your muffin…mmmmm! I am supposed to get a nut-butter package from them soon too. I am beyond excited and will probably give the mailman a giant hug when the package comes. hehehe.

    OMG! Artisana just sent you that package without even warning you or anything!?! How do they know your address and all that? That’s so cool, I would love to try all of Artisana’s amazing products, but they never have a big selection at my local grocery:( DMay I ask- do you contact their site or how did they get in touch with you!!?
