Baking And Painting

Hi everybody! Goodness, I have been super SUPER busy the last few days! Here’s what I’ve been up to…

I’ve been doing lots of baking:

That would be Chelsey’s Quinoa Granola. It was very interesting and extremely different than anything I’ve ever made before! I did like it though, it was extremely tasty!

Green Monster Muffins. I’ve been wanting to make these for MONTHS and finally got around to it!

I made two batches.

The first one, I used a mashed banana for the applesauce. The second batch I subbed pumpkin for the applesauce and added chopped walnuts into the batter. Both batches were delicious, the second one was thicker!

Everyone loved the muffins, nobody could guess there was spinach in them! If you love green monsters as much as I do, please make these, they’re pretty much the best muffins I’ve ever made!

These are Jessica’s Apple Peanut Butter Snack Bars. I loved them, they were a lot like the Earnest Eats Baked Bars! Very thick and chewy.

Aside from all the baking I’ve been doing, we finally painted my room and finished today! When we first moved here I painted one wall of my room pink. After 3 years of that color, I was ready for something new!

It was a TON of work. We took EVERYTHING out of my room and painted. Just me and my mom.  All. Day. Long.

Unfortunately I didn’t take any before photos, but remember this?

Well, this is what it looks like now:

The only new things I got were the paint color, the two prints above that I’ll be framing and the new bedspread.

I loooooveee my “new” room! It’s such a relief to have gotten rid of so much clutter and junk and it feels so refreshing to have such a tidy and neat space!

Today for breakfast I had a microwave egg patty and swiss cheese on two slices of homemade bread that I made yesterday. With a side of fresh fruit!

It was so nice to have fresh fruit, I’ve been eating only frozen for the last few months!

What was the last thing you baked?

P.S I’m going to do another sugar-free week starting on Feb. 1! Please consider doing it!

    That color is so calming – it kinda matches your blog! and that jewelry stand is beautiful. I bet it feels so awesome to have a “new” room.

    I love your jewelry stand!! I love how you have a white board right behind your desk! That is such a great idea!! Does it help you keep organized?

      Thank you!

      The white board is EXTREMELY helpful, especially since I do all my schooling from home! It really helps me to stay organized with everything I need to do!

    Your room looks super!! I should really get a white board for my desk, I’ve been meaning to for a while but I keep putting it off! I bet it helps you stay organized so much! Anyway, enjoy your new room 😀

    Your room looks so pretty! I love the color – so fresh and calming. Also, those Green Monster Muffins look great! I just bookmarked the recipe.
    PS – Your pictures are looking better than usual! Practice definitely makes perfect. (I’ve noticed my more recent pics are MUCH better than the early ones too!)

      Yes, exactly! It’s so funny to look back at photos I took just 4 months ago, my recent ones look tons better! I tell my mom all the time: I’m learning so much about photography just by taking photos of food!

    I’ve been on a huge cookie kick lately! Chocolate chip, healthy whole wheat ones with cherries and almonds, meringues. They’re all so good! Tomorrow I’m making either homemade challah though or whole wheat dinner rolls…get excited:)

    Your room looks awesome! I especially love the jewelry holder. It always feels so great to de-clutter and have a fresh start…

    The green monster muffins sound so good.. I might try the 2nd batch!

    The last thing I baked…hm since I cant remember it’s clearly been too long. I will have to get something going tomorrow morning!!

    I wish I could do a sugar free week with you but with traveling, my boyfriends birthday and my girls night out with sangria slushies i dont find it possible :/

      Thank you! I have a little camera, it’s a Canon PowerShot SX120 IS. I like it because it’s pretty small and has some of the features of the really huge DSLR cameras!

    Your room looks amazing! I especially love the color. The last thing I baked were strawberry muffins. And I actually might do sugar free week with you. I think it’d be interesting to try out and good to see how much sugar I actually take in.

    oh i LOVE room re-decorating! when i lived at home I used to re-arrange my furniture in my bedroom every few months and paint every year! love it. yours looks gorgeous – love the teal colour.
    the last thing i baked was carob-banana muffins – recipe coming soon!

    LOVE the new wall color! And props on the photography skills! I am a sucker for off-set camera angles and I love that pic of your feet in the mirror!

    I made Chelsea’s granola not too long ago and loved it! Definitely a different twist on granola with the quinoa, but hey, it’s packed with protein! I’ve been wanting to make those green monster muffins so bad! Good to know they were such a hit!

    Unfortunately, I haven’t baked in a loooooong time! I’m so jealous of you! 🙂
    I’ve wanted to make green spinach muffins forever, and now that I know they’re good I MUST make them – they would be perfect for Saint Patrick’s Day!
