Whole Wheat Snickerdoodles

I’m sorry that it is a Wednesday in June and I am posting another cookie recipe.

I have Christmas on the brain.

Yesterday, you would have found me singing “A Holly Jolly Christmas”.

Today, I made Snickerdoodles.

I think this is evidence that I am more than ready for Christmas In July.

Whole Wheat Snickerdoodles

2 cups whole wheat flour

1/2 tsp. cream of tartar

1 tsp. baking soda

pinch cinnamon

1/2 cup canola oil (or coconut oil, or butter)

1 cup granulated sugar

2 eggs

1 tsp. vanilla extract

2 Tbsp. sugar + 1 tsp. cinnamon, for rolling

Preheat oven to 375°F. With an electric mixer, cream together the sugar, oil, vanilla and egg until smooth. Add the whole wheat flour, cream of tartar, baking soda and cinnamon, mixing until well incorporated and dough is formed. Shape dough into balls and roll in cinnamon-sugar mixture before placing on baking sheet. Flatten the cookie dough balls with the palm of your hand to make uniform circle shapes. Sprinkle with more cinnamon-sugar. Bake for 10 minutes.

Snickerdoodles are my favorite. Crunchy and cinnamon-sugary on the outside and soft in the middle.

I love how they puff up and get that pillow-y look on the top. No other cookie does that. Amazing.

    I love snickerdoodles. Nothing wrong with celebrating Christmas all year…especially if yummy cookies are involved 🙂

    I have been eating cookies and cake and everything related to the holidays. You know…if you get too many cookies you can always mail them to me. 😉

    Snickerdoodles will always remind me of my 8th grade spanish teacher. She was obsessed with them and frequently baked them and sold them to us to raise money for the school’s community service club. She was the sweetest woman ever! I haven’t had snickerdoodles since and these would be perfect to quell the cravings!

    I’m a sucker for cookies, and I have no idea why, but I usually just opt for chocolate chip. I love snickerdoodles though! Thanks for the reminder 😉

    I could eat Snickerdoodles all year round! And it’s funny you mention Christmas, I was just thinking about seasonal food items and how I wish I could eat them in summer 🙂

    I don’t usually like snickerdoodles but these look goooood! I’m thinking it’s b/c I know the whole wheat flour will give it a more wholesome taste and flavor.

    Oh YUM!!! I love how you used Whole Wheat Flour! I’ve never seen snickerdoodles with Whole Wheat. THAT IS SO AWESOME!!!! I love how healthy these are!

    Haha! I was singing a Christmas song a week or two ago and was like, “why am I singing that?”. If Chrsitmas were in summer, that would be cool. But then there would be nothing to look forward to in winter, so I guess we can leave the calender be 🙂

    snickerdoodles are my favorite cookies to bring to my friends. every international exchange program i’ve done, i’ve made them for the other delegates. they go nuts for the cinnamon sugar delights! i love that you’ve pumped up the nutrition by making them whole wheat. i will definitely remember this recipe so i can feel a little bit better about giving my friends wholesome treats to eat.
